Recipe of Vegetable Poha | Flattened Rice

One more healthy recipe that can be served for breakfast and is yummy. This can be served with Mint Chutney. It is an easy recipe and liked by everybody. Poha (Flattened Rice) is an amazing starter also.

Lets start with a recipe :

Ingredients : 
  • 2 cup Poha (Flattened Rice)
    Vegetable poha, flattened rice, healthy recipe, easy recipe, breakfast, snack
  • 2 tablespoon olive oil
  • 1 tablespoon Mustard seeds
  • 8 leaves of Kadi patta
  • 2 finely sliced onion
  • 2  chopped green chillies (Optional) 
  • 2 chopped carrots
  • 1 chopped capsicum
  • 1/2 cup chopped beans
  • 1/4 cup peas
  • 1 boiled potato
  • 1 handful roasted peanuts
  • Salt according to taste
  • 1 teaspoon chaat masala
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon jeera powder
  • 1 lemon
  • coriander leaves for garnishing
Preparation :
  1. Wash poha in a strainer
  2. Put oil in a pan and heat
  3. Add mustard seed in a heated oil and wait till it splutters
  4. Add kadi patta, green chillies and chopped onion to it.
  5. When onion turns pink, add chopped vegetables (Carrot, capsicum, peas and beans) 
  6. Cook it on simmer for 5 min and add potato and peanuts to it
  7. When ready, add poha to it 
  8. Put salt, chaat masala, garam masala and lemon and mix well
  9. Sprinkle few drops of water and let it cook for another 2 minutes
  10. Now your poha is ready, garnish it with coriander leaves and serve hot with mint chutney.
