Recipe of Rabdi | Basundi | Indian eggless Dessert

How to make Rabdi or Basundi

It is delicious Indian dessert made from minimum ingredients which are mostly available in everybody's kitchen. It is prepared by thickening milk and sugar. It can be eaten hot or cold, it tastes delightful both ways. It can be stored upto 2 days but remaining portion after serving has to be immediately refrigerated.

Ingredients :

  • 1 liter full cream milk
  • 1 cup sugar
    Rabdi, Basundi, Rabri, Indian sweets, dessert
    Basundi
  • 10 strands of saffron
  • Chopped almonds for garnishing
Preparation :
  1. Heat milk in a steel pan or a vessel and bring it to boil
  2. Take out 2 tablespoon milk in a bowl and add saffron in it. Keep it aside.
  3. Keep heating and stirring the milk on low flame
  4. When milk will be thickened and quantity reduced to less than half, scarp the sides of the pan as some of the thickened milk will stick to it.
  5. Add sugar and saffron milk which we kept aside.
  6. Cook it for 5 more minutes on low flame and stir often
  7. Garnish it with chopped almonds
  8. You can serve it hot or cold
