How to make lemon rice | How to use leftover rice

Lemon Rice is a famous rice specialty of South India. It is a delicious and easy to make. It is flavored with lemon juice and tempered with aromatic Indian spices. You can make it from the leftover rice, raw or cooked rice. Lemon rice is tangy with the crunch of peanuts. You can serve it as a stand alone dish or a side dish. It tastes great with pickle and yogurt. It is vegan and gluten free. Lemon rice is a great way to turn leftover rice into a wonderful dish which can be served for breakfast, lunch or dinner. It is easy to prepare with few ingredients. You can make these rice in jiffy, it can quickly prepared with the minimum ingredients. You can also pack it it for tiffin with any curry or with pickle.

Ingredients for rice :
  • Raw rice
  • Water
Ingredients for Lemon Rice
  • 3 cup cooked rice (chawal)

  • 1 tablespoon mustard seeds (sarso)
  • 1 tablespoon dhuli urad dal (split black gram)
  • 1 cup peanuts
  • 1 teaspoon hing (Asafoetida)
  • 10 curry leaves (Kadhi patta)
  • 3 sliced medium onions
  • 2 dry red chillies
  • 2 lemon
  • 1 teaspoon turmeric (haldi)

  • 3 teaspoon chaat masala
  • 1 teaspoon pepper (Kali mirch)
  • Salt according to taste
  • Olive oil / Refine oil
Preparation for Rice :
  1. Wash and soak rice in water for 15 minutes (if you are making it with raw rice)
  2. Add raw rice in the pressure cooker and add 3 and a 1/2 cup of water
  3. Steam rice for 1 whistle
  4. Rice are done, keep them aside
Preparation  for Lemon Rice :
  1. Heat oil in a pan, add mustard seeds, asafoetida(hing) and urad dal in it

  2. When they splutter, add peanuts, curry leaves, and onion
  3. Break dry red chilly in 2 pieces and add that too
  4. Cook till onions turn light brown
  5. Add salt, turmeric, chaat masala, pepper in the same and mix
  6. Keep flame low and sdd cooked rice, toss it a little, and mix it softly 
  7. Add lemon juice in the same and mix again, rice will change color a little after adding rice
  8. Cook for 2 minutes on flame for flavours to blend.
  9. Serve hot with pickle or curd.
Note : 
  • Do not over cook rice, it will not taste the same
  • Add lemon juice according to how tangy you want the flavour to be
