Rice Kheer | Rice Pudding

How to make rice pudding | Rice Kheer | Best way to use leftover rice

It is delicious Indian dessert made from minimum ingredients which are mostly available in everybody's kitchen. It is a delicious dessert you can make from raw, cooked or leftover rice. In India it is prepared on special occasions and festivals too. It is prepared by thickening milk, sugar and adding rice to it. It can be eaten hot or cold, it tastes delightful both ways. It can be stored upto 2 days but remaining portion after serving has to be immediately refrigerated.

Ingredients :
  • 1 liter full cream milk
    Rice Pudding, Rice Kheer, Chawal ki kheer, Indian sweets, Indian desserts
    Rice Kheer
  • 1 cup sugar
  • 10 strands of saffron
  • 1 bowl of cooked rice (Fresh / Leftover)
  • Chopped almonds for garnishing
Preparation :
  1. Heat milk in a steel pan or a vessel and bring it to boil
  2. Take out 2 tablespoon milk in a bowl and add saffron in it. Keep it aside.
  3. Add cooked rice in the milk and keep heating and stirring the milk on low flame
  4. When milk will be thickened and quantity reduced to less than half and rice mix well with the milk, scarp the sides of the pan as some of the thickened milk and rice will stick to it.
  5. Add sugar and saffron milk which we kept aside.
  6. Cook it for 10 more minutes on low flame and stir consistently
  7. Garnish it with chopped almonds
  8. You can serve it hot or cold
Note :  We have made this with cooked rice. If you want to make it with raw rice, it will take additional 20 minutes time.
