How to make veggies oats upma

Veggies oats upma is a wholesome, healthy and nutritious breakfast recipe. It is delicious and easy to make. Different vegetables makes it colorful and delightful. It can be served as a standalone dish, or with Mint Chutney and a cup of tea or chocolate milk. When you want to treat yourself with the delicious meal, you can make veggie oats upma. You can have it as much as you like without guilt and it would be relished by kids too.

Lets start with the recipe :

Ingredients :
  • 2 cups oats
  • 1 teaspoon mustard seeds (sarso)
  • 1 pinch asafoetida (heeng) 
  • 10 curry leaves (kadhi patta)
  • 2 dry red chilly
  • 1 cup peanuts
  • 3 chopped carrots
  • 2 chopped capsicum
  • 1 cup chopped beans
  • 4 chopped onions
  • Salt according to taste
  • 1 teaspoon chaat masala
  • 1 teaspoon pepper
  • 2 lemon (according to taste)
  • 1 tablespoon refine oil/olive oil
Preparation :

  1. Dry roast oats in a pan for few minutes on low flame and keep it aside
  2. Heat oil in a pan, add mustard seeds and asafoetida (heeng) 
  3. When it splutters, add peanuts and roast it 
  4. Add onions, curry leaves and red dry chilly in it
  5. When onion turns light brown, add carrot, bell pepper,and beans in it
  6. Cook on low flame, then cover with a lid, till the vegetables cook properly
  7. Add salt, chaat masala, pepper and mix it
  8. In another pan, where you roasted oats, add 2 cups of water
  9. When water starts boiling, stir it until it absorbs all the water
  10. Add veggies and lemon juice in it and mix well
  11. Serve hot oats upma immediately with pickle or mint chutney

Note : 
  1. Serve oats upma immediately otherwise it will become sticky
  2. You can add corn or any other vegetable in oats
