Recipe of Paneer Pav bhaji

How to make Pav Bhaji 

Pav Bhaji is a famous Indian street food which is made by blending vegetables in tomato gravy and served with soft and spongy buns. Pav Bhaji is a potpourri of different color vegetables with buns. It be served as a breakfast or lunch. Vegetables makes it nutritious and if you serve it with whole wheat bun and a bowl of salad, that will make it a complete nutritious meal. It is a traditional meal of India which is full of Indian flavors. When vegetables are blended and mixed in onion tomato gravy, aroma of spices will make you crave for it. Pav bhaji is quiet easy to make, and delicious to eat. It is an Indian filling savory snack which is full of taste and everybody's favorite.

Lets start with the recipe :

Ingredients for gravy :
  • 3 crushed/chopped onions
  • 6 crushed tomatoes
  • 2 teaspoon ginger garlic paste
  • 3 chopped green chillies
  • 1 teaspoon cumin seeds
  • pinch of asafoetida (Heeng)
  • Salt according to taste
  • 1 teaspoon pepper
  • 2 teaspoon chaat masala
Ingredients for Bhaji :
  • 8 soft ready-made buns
  • 4 boiled potatoes
  • 1/2 chopped cauliflower 
  • 1/2 chopped cabbage
  • 1 chopped capsicum
  • 3 chopped carrot
  • 1/2 chopped bottle gourd
  • 1/2 cup chopped beans 
  • half cup shredded paneer (cottage cheese)
  • Lemon
  • Butter
  • Coriander leaves and chopped onion for garnishing
Preparation for Gravy :
  1. Heat 1 tablespoon oil in a pan
  2. Add cumin seeds, and asafoetida (Heeng) in it
  3. When it splutter, add onions, green chillies and garlic paste in it
  4. When onion turns golden brown, add crushed tomato 
  5. Add salt, pepper, and chaat masala in it
  6. Let it cook on low flame for sometime, until gravy cooks 
Preparation for Pav Bhaji :

Pav bhaji gravy

  1. Boil vegetables in a pressure cooker, they should be soft enough to be mashed
  2. Take out excess stock of vegetables and keep it aside
  3.  Mash vegetables with the masher
  4. Add mashed vegetables in the gravy that we made
  5. Add cottage cheese into it
  6. Add 1 teaspoon butter in it
  7. Put the lid on the pan and let the bhaji cook for sometime
  8. Stir it occasional, make sure vegetables and gravy are mixed properly and vegetables are blended and mashes to the thick gravy consistency
  9. When done, add lemon juice and mix it
  10. Garnish it with coriander leaves and chopped onions
  11. For buns, heat tawa and slit buns in half from the middle
  12. Sprinkle butter on the tawa, place buns on the tawa
  13. Let it cook from both the sides, it should be golden from both the sides
  14. Serve Hot buns with Bhaji : Serve hot Pav Bhaji with salad
Note :
  • Boil and mash vegetables properly and it should cook properly
  • Gravy and vegetables should blend properly
  • You can add or subtract vegetables for bhaji
  • You can serve bread with bhaji too
  • You can refrigerate it for a day
