How to make Thai Rice Vegetable noodles

Thai rice noodles with mix vegetables is a healthy and delicious option for any meal in a day. All vegetables like cabbage, capsicum, carrot makes it nutritious. These noodles are easy to prepare. You can finish a bowl full of warm and yummy noodles in the cold evening with a nice mocktail. To prepare these delicious noodles, you have to cook rice noodles and add vegetables, seasoning and sauces in it. These noodles are flavorful and the combination of different veggies and sauces make them super delicious. We have used rice noodles which are wheat and gluten free. You can add your choice of vegetables and substitute them with your favorite ones. They are quick, tangy, rich and filling one pot meal.

Lets start with the recipe :

Ingredients :
  • 1 bowl thai rice stick noodles
  • 2 sliced capsicum/bell pepper
  • 3 sliced carrots
  • 1 chopped cabbage
  • 4 sliced onions
  • 2 chopped green chillies
  • 8 chopped garlic cloves
  • 2 tablespoon soya sauce
  • 2 tablespoon vinegar
  • Salt according to taste
  • 1 teaspoon pepper
  • Olive oil
Preparation :

  1. Boil water in a big pan, add salt and oil 
  2. Add noodles in the boiling water
  3. When noodles become soft and fluffy, remove it from the stove
  4. Drain water and add cold water in a drainer, keep it aside
  5. Take another big pan, add 1 tablespoon of olive oil
  6. Add onion, garlic and green chilly, saute for a minute
  7. Then add carrot, green bell pepper and cabbage in the same
  8. Close the lid for a minute and then open fry the vegetables so that they remain crisp and crunchy
  9. When vegetables are cooked, add boiled noodles in the same
  10. Add salt and pepper 
  11. Add soy sauce and vinegar.
  12. Toss it well and mix it carefully
  13. Serve immediately

Note : 
  • Don't overcook the vegetables, they should be crisp and crunchy
  • Don't over boil the noodles, otherwise they will not taste good
