How to make bottle gourd pudding | Lauki ki kheer

A delicious bottle gourd pudding also called as 'Ghiya ki kheer' or 'Lauki ki kheer' is delicious Indian eggless dessert made from 3 ingredients. It is often made on festive season in India .Because Christmas is a festival of love and togetherness, I have made this special pudding for my family and wanted to share this special recipe with my friends. So here I am sharing this recipe with you all. This pudding is divine with beautiful aroma and color of saffron. It can be made using sugar or jaggery, the preparation is same for both.

Lets start with the recipe :

Ingredients :
  • 1 cup grated bottle gourd (Ghiya)
  • 1 liter full cream milk
  • 1 cup sugar
  • 10 strands of saffron
  • 10 raisons
  • Chopped almonds for garnishing 
Preparation :



  1. Heat milk in a steel pan or a vessel and bring it to boil
  2. Take out 2 tablespoon milk in a bowl and add saffron in it. Keep it aside.
  3. Add grated bottle gourd in the milk and keep heating and stirring the milk on low flame
  4. When milk will be thickened and quantity reduced to less than grated bottle gourd mix well with the milk, scarp the sides of the pan as some of the thickened milk and bottle gourd will stick to it.
  5. Add sugar, raisins and saffron milk which we kept aside.
  6. Cook it for 10 more minutes on low flame and stir consistently
  7. Garnish it with chopped almonds
  8. You can serve it hot or cold

  1. I am very fond of sweets made out of Lauki. Have had Lauki Ka Kheer, but never before has it looked so inviting and gourmet. I loved your presentation. The bright colour induced by saffron is making the Kheer truly truly gorgeous. Awesome dear.

  6. wonderful dish. looks heavenly Ritu! My mum once made lauki ka halwa. I've never tried making it! -The next time I set my eyes on lauki, I GOING to make it for sure now that i've set my eyes on yours! the addition of saffron definitely makes it a starnd-out dish :)
