How to make Vegetable Spinach Rice

Recipe of Vegetable Spinach Rice | Palak Rice

Green spinach rice with vegetables is delicious, nutritious and flavorful. It is easy to cook, healthy and absolutely scrumptious. Spinach is healthy and full of Iron. I love finding different ways to include spinach in our diet and I think this is the best option. It is scrumptious and filling one pot healthy meal. It can be a very good tiffin dish too. Most of the kids don't like spinach, it is the best way to make them eat spinach. Green rice looks beautiful and aroma of herbs and spices used in it make it tempting.

Ingredients :
  • 2 cup basmati rice
  • 1 bunch of Spinach
  • 1/2 cup mint leaves
  • 1/2 cup coriander leaves
  • 1/2 cup peas
  • 1/2 cup chopped beans
  • 2 chopped carrot
  • 2 chopped onions
  • 3 crushed tomatoes
  • 8 chopped cloves of garlic
  • 2 chopped green chillies
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 teaspoon pepper
  • Salt according to taste
  • Oil
Preparation :
  1. Soak rice in water for 30 minutes
  2. Chop spinach, mint leaves and coriander leaves
  3. Add little water and blend it in a blender into a smooth paste, keep it aside
  4. in a pressure cooker, pour 1 tablespoon of oil and add cumin seeds, garlic cloves and green chillies
  5. Add onion and let it cook until it turn golden brown
  6. Add crushed tomato in it, cook for another minute until tomatoes are cooked
  7. Add garam masala, coriander powder, pepper and salt in it and cook
  8. Add all the vegetable in it (beans, carrot, peas)
  9. Add rice and 2 1/2 cup of water or water as required
  10. Let it cook till one whistle and then let it cool down
  11. Serve hot with yogurt or raita

Note : 
  1. You can add any vegetable that you like
  2. Instead of using pressure cooker, you can make it in an open pan
