How to make vegetable corn idli

Idli is a famous south Indian breakfast all over the world. Vegetable corn Idli is an Indian steamed pancakes packed with nutrition and taste. These are soft and fluffy idlis made of fermented rice and lentil. They are fluffy from outside, soft and spoongy from inside. Different veggies enhances the taste and flavour of the Idlis. These Idlis are fully loaded with nutrition. When accompanied with sambar and coconut chutney, it makes it a complete delicious meal.  It is a perfect steamed breakfast recipe which can be served everyday. These Idlis are easy to make and you can refrigerate them too for the next day. There are some great ways of using leftover idlis too.When serve hot, tastes best.






Lets start with the recipe :

Ingredients :
  • 1 cup Rice 
  • 1/2 cup urad Dal
  • salt as per taste
  • olive/refine oil
  • 1 teaspoon chaat masala
  • 1 teaspoon pepper
  • 1 chopped bell pepper
  • 2 chopped carrot
  • 1 chopped onion
  • 1/2 cup beans
  • 1 chopped green chilly
  • 1/3 cup corn kernels 
Preparation :
  1. Wash rice, urad dal and soak them in water overnight or for 6 hours
  2. Grind it into a smooth batter with enough water
  3. Add salt and mix it well
  4. Keep it aside for 3 to 4 hours for fermentation
  5. Add bell pepper, carrot, beans, corn, green chilly in it
  6. Then add chaat masala and pepper and mix well
  7. Grease idli plate with oil and pour batter in the plate
  8. Top the batter with some more veggies
  9. Steam idli for 25 minutes
  10. For checking out if its done, place a knife in one of the idli, if its not sticky, its done
  11. Take out the plate and carefully take out the idlis
  12. Serve Hot with sambar and coconut chutney or serve it with tomato sauce.
