How to make Atta Kathi Rolls

Recipe of whole wheat Kathi Rolls

Whole wheat Kathi rolls with  veggies are delicious and healthier variation of popular street food of north Indian. You will find it in every corner of Capital city of India i.e 'Delhi'. It is originated from 'Kolkata'. It is a quick dish which can be prepared in jiffy. It is a stand alone recipe which can be served without any accompaniment. If you like it spicy, you can add red or green chilly in that. It is vegetarian and eggless. Make sure to serve it hot otherwise it will become soggy and you will not enjoy it. I have made deep fried rolls, you can also cook it like a chapati or flatbread, but it is crispier when you deep fry them. Do cut vegetables in the same size, they will cook properly.

Kathi rolls are popular among kids too. This is the best way to make them eat all the veggies with this filling snack. You can add tomato ketchup in the veggies, while making it for kids. It is a simple and easy recipe. You can even cook it with the leftover chapatis/flatbread. You can add your choice of veggies in it and if your kid is fond of cottage cheese or shredded cheese, you can add them with veggies. Kathi Rolls are perfect for breakfast or evening snacks.

Lets start with the recipe :

Ingredients :

  • 1 cup whole wheat flour (Atta)
  • 1 chopped cabbage
  • 2 chopped bell pepper(red and green capsicum)
  • 2 chopped carrots
  • 1 cup chopped beans
  • 1/2 cup boiled corn kernels 
  • 1 chopped green chillly
  • 2 sliced onions
  • Salt according to taste
  • 1 teaspoon pepper
  • 1 teaspoon chaat masala
  • 1 teaspoon pepper
  • Oil
Preparation for dough :
  1. In a bowl, add whole wheat flour, salt and 1 teaspoon oil
  2. Add some water and knead a smooth dough. It should be little thick and hard then the normal chapati dough. Keep it aside for 15 minutes
Preparation for Rolls :
  1. In a non-stick pan, heat 1 tablespoon oil
  2. Add onions and wait till they turn pink
  3. Add cabbage, bell pepper, carrot, beans and green chilly in it and let it cook
  4. When they are half cooked, add corn and cook, make sure you don't overcook the vegetables. They should be crispy to bite
  5. Add pepper, chaat masala, salt and mix it
  6. Keep it aside
  7. Roll out a thin round big chapati with rolling pin
  8. Stuff veggies in the center of the chapati and roll it from both the sides like a wrap
  9. Apply some oil with your finger tips on the edges of the rolled portion
  10. Join the edges to seal it with the little oil that we put on the edges
  11. Make sure to check all the edges are sealed properly
  12. Heat oil in a deep pan for deep frying
  13. Deep fry the rolls one by one
  14. Follow the same process for more rolls
  15. Cut it in equal portions and serve hot with salad, dips or chutneys

Note : 
  • Chaat masala is an Indian spice, if that is not available, you can add little tomato ketchup or lemon in the veggies
