How to make Palak Kofta

Recipe of Palak Kofta | Dumplings in Spinach gravy

Palak Kofta is a classic famous north Indian curry dish. Koftas are delicious soft cottage cheese, cashew stuffed deep fried dumplings which are simmered in green spinach gravy flavored with Indian spices.

This aromatic dish is full of flavours and aroma of Indian spices. It is a best vegetarian curry which goes well with any Indian flatbread or rice.The best part about this dish is that it is easy to make and delicious.

Lets start with the recipe :

Ingredients for Dumplings:
  • 1 cup mashed or grated cottage cheese (Paneer)
  • 12 cashews
  • 2 slices of bread
  • Salt according to taste
  • 1 teaspoon pepper
  • 1 teaspoon chaat masala
  • Finely chopped coriander leaves
  • Oil for deep frying
Ingredients for Gravy :
  • 1 teaspoon cumin seeds
  • 2 spinach bunch (Palak)
  • 2 medium size chopped onions
  • 2 medium size crushed tomatoes
  • 8 chopped garlic cloves
  • 2 chopped green chillies
  • Salt according to taste
  • 1 teaspoon garam masala 
  • 1 teaspoon pepper
  • 1 teaspoon coriander powder
  • 1 tablespoon sour cream
Preparation for Dumplings :
  1. In a bowl, add mashed cottage cheese (Paneer), broken cashews, coriander leaves, and crumbled bread
  2. Add salt, pepper and chaat masala in the same and mix well
  3. Make 8 medium sized balls of the mixture and keep it in a plate
  4. Heat oil in a deep pan
  5. Deep fry few of the balls together on low flame
  6. When they turn golden brown from both the sides, take them out on a tissue or a oil absorbent paper
  7. Keep them aside
Preparation for gravy :
  1. Cut and wash spinach thoroughly in running water and drain 
  2. Boil water in a deep pan and add spinach leaves for 2 minutes
  3. Drain water immediately and pour cold water over it for preserving the green color of spinach
  4. Blend it into the smooth paste 
  5. Heat oil in a pan, add jeera in it
  6. When they splutter, add chopped garlic, onion and green chillies
  7. When onions turn light brown, add crushed tomato
  8. Add coriander powder, garam masala, pepper and salt
  9. Mix well and let it cool down
  10. Blend the whole tadka(mixture) in blender
  11. Add little water and cook on low flame
  12. Add dumplings to the gravy while serving
  13. Serve hot with Indian flatbread or rice

Note :
  1. Make sure to serve immediately after adding dumplings otherwise they will become very soft in the gravy
  2. You can increase or decrease the spices according to your taste
  3. You can shallow fry the dumplings too
  4. I have added bread for binding the dumplings, you can substitute it with potatoes and corn flour
