A delicious sweet and tangy hearty tomato soup topped with scrumptious healthy veggies and coriander leaves is perfect for a cold evening. It has depth of flavor and texture. Tomato soup can be made in different ways, I have given a twist to a classic tomato soup by adding fresh, healthy and nutritious veggies to it. It is easy and delicious tomato soup perfect for dunking bread. It is vegan and dairy free.


Tomato soup is one of the most famous soup in all north Indian restaurants served with croutons. I have given a twist to the classic soup, to make it more nutritious and healthy. For the best flavor and taste, I have used fresh red tomatoes, carrots and vegetables in it. With the fresh ingredients available in your kitchen, you can make this easiest and tastiest soup.

Ingredients for soup :

  • 8 medium sized tomatoes
  • 3 small carrots for soup
  • 1 small onion
  • 4 garlic cloves
  • Salt according to taste
  • 1 teaspoon pepper
  • Pinch of sugar
Ingredients for veggies :
  • 1/2 chopped beans
  • 1/3 cup peas
  • Chopped cottage cheese
  • 2 small chopped carrots 
  • 8 florets of cauliflower
  • chopped coriander leaves
  • 1 teaspoon butter
  • Salt according to taste
  • 1 teaspoon pepper
Preparation :


  1. Add tomatoes, carrot, onion, garlic with 1 cup of water in a pressure cooker
  2. Let it cook for 3 whistles
  3. Blend it in a blender to a smooth puree
  4. Strain it with the strainer
  5. Take a deep pan, pour it and add salt, pepper and sugar in it
  6. Let it boil on simmer for 2 minutes and soup is done
  7. For veggies, take another pan, heat butter in it
  8. Add all the veggies, cottage cheese, salt, pepper and let them cook on a low flame
  9. Put a lid and keep on checking often
  10. Vegetables should be crisp and crunchy, so don't cook it completely or don't overcook it
  11. Turn off the heat, once they are done
  12. Add veggies in the soup, garnish with chopped coriander leaves and serve hot
