How to make soft Idlis

Idli sambar is a famous Indian breakfast which is delicious, easy to make and light on stomach. Idli is an Indian steamed pancakes served with coconut chutney and sambar. Idli is made of fermented rice and lentil and are fluffy from outside, soft and spongy from inside. Idli is easy to make and you can refrigerate it for few days. When serve hot, it tastes best. It is simple comfort food which can be eaten everyday which is vegan and gluten free.


These Idlis are perfect for quick and healthy breakfast. It is a south Indian savoury dish which is relished by kids and you can pack it in tiffin. They can be served as a stand alone dish or with the sides like sambar and chutney. There are some great ways of using leftover Idlis.


Lets start with the recipe :

Ingredients :
  • 1 cup Idli rice/ regular rice  
  • 1/2 cup urad Dal
  • Pinch of fenugreek seeds
  • salt according to taste
  • olive/refine oil
Preparation :
  1. Wash and drain rice and soak them in water
  2. Wash and drain urad dal, add fenugreek seeds and soak them in water overnight or for 6 hours
  3. Grind them into a smooth batter separately with little water (as required)
  4. Batter should be thick, not very watery
  5. Mix it together, add salt and keep it aside for 4 hours or overnight for fermentation
  6. Grease idli plates/mould with oil and pour batter in the plate
  7. Steam idli for 25 minutes on low flame
  8. Check if it is done by placing a knife in one of the idli, if its not sticky and come out clean, it is done
  9. Take out the plate/mould and carefully take out the idlis
  10. Serve hot with sambar and coconut chutney.

  4. What a lovely pancake - I love the soft, fluffy texture. In Chinese culture, we have simple steamed buns that we eat for breakfast that is something like this. It's pure delicious comfort food in the morning.

  7. What an interesting way to make steamed buns. I like the process of fermenting the flours prior to steaming. I would love to try something new like this!
