How to make Veggie Semolina Macroni

Recipe of Indian Style Veggie Semolina Macroni

I have always been fond of semolina macroni and prepare it often. I always look for a comfort food which can be easily put together and is quick and delicious. This semolina macroni with veggies is healthy and delicious option for lunch or brunch. Kids are fond of this too, you can pack this for their tiffin. You can serve it with a slice of crisp bread or as a stand alone dish. You can customize it by putting your choice of veggies in it. It is an Indian style macroni with crispy and crunchy veggies, Indian spices and herbs. You can also top it with parmesan or cheddar cheese. I have garnished it with oregano and chilly flakes, you can add your choice of herbs in it.


It is a quick dish which can be prepared in jiffy. It is a stand alone recipe which can be served without any accompaniment. If you like it spicy, you can add red or green chilly in that. It is an easy recipe which is vegetarian and eggless. Make sure you serve it hot otherwise it will become sticky and you will not enjoy it. This Indian style macroni is so delicious that you can resist finishing the whole bowl after taking a bite. Use fresh vegetables in it and make sure to cut it in the same size.

Ingredients :
  • 1 pack of Macroni
  • 2 tablespoon olive oil
  • 1 teaspoon garlic paste
  • 1 chopped green chilly 
  • 1 sliced onion
  • 1 diced green bell pepper
  • 1 diced red bell pepper
  • 1 diced yellow bell pepper
  • 1 chopped cabbage
  • 2 chopped carrots
  • 1/2 bowl boiled corn
  • 1 tablespoon crushed tomato
  • Salt according to taste
  • 1 small size lemon
  • 1/2 teaspoon chaat masala
  • 1/2 teaspoon pepper
  •  pinch of oregano and chilly flakes for garnishing 
Preparation :
  1. Boil water in a big pan, add 1 teaspoon oil and pinch of salt in it
  2. Add macroni in boiling water and let it cook until done
  3. Drain water and rinse with cold water and keep it aside
  4. Take another pan and heat 1 tablespoon oil 
  5. Add onions, and let it cook until they turn pink
  6. Add garlic paste and green chilly
  7. Add green, red, yellow bell pepper and cabbage
  8. Add carrot and corn and cook until done 
  9. Keep vegetables crunchy and and turn off the heat
  10. Add salt, chaat masala, pepper and mix it well
  11. Add crushed tomato in it and cook on low flame
  12. In a big pan, mix macroni and veggies 
  13. Squeeze lemon on the top of it
  14. Garnish with oregano and chilly flakes
  15. Mix it and Serve hot

  1. What a nice variety from the classic American mac & cheese I think of when I hear macaroni. Love the veggies and spices in your version. It sounds full of flavor and texture.
