It goes perfect with all Indian chutneys or you can serve it as a stand alone dish. It is super healthy and yummy. It is light on stomach and filling.

Lets start with the recipe :

Ingredients :
  • 2 cups quinoa
  • 1 teaspoon mustard seeds (sarso)
  • 1 pinch asafoetida (hing) 
  • 1 teaspoon turmeric
  • 10 curry leaves (kadhi patta)
  • 2 dry red chilly
  • 1 cup peanuts
  • 3 chopped red carrots
  • 1/2 chopped cabbage
  • 1 sliced green bell pepper
  • 4 sliced red sweet pepper
  • 4 sliced yellow sweet pepper 
  • 4 sliced onions
  • Salt according to taste
  • 2 teaspoon chaat masala
  • 1 teaspoon pepper
  • 1 teaspoon cumin powder
  • 2 lemon (according to taste)
  • 1 tablespoon refine oil/olive oil
Preparation :

  1. Dry roast quinoa in a pan on low flame till it turns light golden
  2. Boil it in a pressure cook till it it soft 
  3. Drain the water in a strainer and keep it aside
  4. Heat oil in a deep non-stick pan, add mustard seeds and asafoetida  
  5. When it splutter, add peanuts and roast them 
  6. Add curry leaves and red dry chilly in it
  7. Add onions and cook till they turn light brown 
  8. When onion turns light brown, add carrot, bell pepper, cabbage and sweet peppers in it
  9. Cook on low flame, then cover it with a lid, till the vegetables are cooked - don't over cook the vegetables, keep them crispy 
  10. Add salt, chaat masala, pepper, cumin powder, turmeric and mix it
  11. Add roasted boiled quinoa in the veggies and mix it
  12. Add lemon juice and toss it
  13. Serve hot Quinoa upma with mint chutney
