You can add life to your leftover pumpkin vegetable with this delicious fritter. Fritters from leftover pumpkin vegetable which are colorful delicious fritters coated with gram flour and flavored with Indian Spices. They are crispy and packed with flavor. This appetizer is the best way to use leftover stored in your fridge.


You can make yummy breakfast out of it. They are crispy from outside and soft from inside.

Ingredients :
  • 1 bowl left over pumpkin vegetable
  • 1/4 cup gram flour/besan
  • 2 chopped medium sized onion
  • pinch of asafoetida / Hing
  • Salt according to taste
  • 1 teaspoon chaat masala
  • 1 teaspoon pepper
  • 1 chopped green chilly
  • handful of chopped spinach 
  • Oil
Preparation :
  • Wash, rinse and drain spinach leaves(Palak) in running water
  • Chop spinach and keep it aside
  • Take besan (Gram flour) in a bowl
  • Add salt, asafoetida, chaat masala, pepper in it
  • Take a bowl, add left over pumpkin vegetable, onions, green chilly, spinach and gram flour
  • Sprinkle little slowly and bind well. Add water according to consistency. 
  • Batter should be of medium consistency (Not too thick and not too thin)
  • Heat oil in a shallow pan for deep frying
  • When it is hot, drop it in the oil with the spoon or hand 
  • Keep the flame medium, and let it cook from both the sides
  • When it turns golden from both the sides, take them out on a tissue paper or oil absorbent paper 
  • Sprinkle some chaat masala on the top of fritters/pakodas
  • Serve hot with Mint Chutney or tamarind chutney
