How to make Pani Puri

How to make Pani Puri | Golgappa | Puchka

Pani Puri is a famous Indian street food which is also called Golgappa. Pani is spicy, sour, tangy water and puris are crispy semolina round balls. It is served with sweet and tangy tamarind chutney and delicious yellow peas and potato mixture. This pani puri is addictive. It doesn't require any cooking, prepare all the ingredients, top is with mixtures, add pani and serve these yummy crispy pani puri. You can use readymade puri or you can prepare it at home. Once you have all the ingredients ready then it is ready in no time.

Ingredients for Puri and stuffing:
  • 30 puris (readymade or homemade)
  • 4 potatoes
  • 1 cup boiled yellow peas
  • 1 cup tamarind chutney
  • 1 cup Mint Chutney
  • 1 cup boiled yellow peas
  • 3 chopped onions
  • 1 teaspoon black pepper
  • 1 teaspoon chaat masala
  • Salt according to taste 
  • 1 cup sev
  • 1/2 teaspoon red chilly powder
  • 1/2 cup chopped coriander leaves
Ingredients for Pani :
  • 1/2 cup tamarind chutney
  • 1/2 cup mint chutney
  • 1 tablespoon lemon juice
  • 1 teaspoon cumin power
  • Pinch of asafoetida
  • 1/4 teaspoon black salt
  • 2 cups of cold water (according to the consistency)
  • 1 tablespoon boondi (fried tiny gram flour balls)
  • 1 teaspoon powdered jaggery/Sugar (Optional)
  • Salt according to taste
Preparation for Stuffing:

  • Boil potato and yellow peas separately in a pressure cooker and keep it aside
  • In a bowl, add mash potatoes, coriander leaves, onion, salt, chaat masala, chilly powder and pepper in it
  • Mix it well and keep it aside
  • In another bowl, add yellow peas, add salt, chaat masala, chilly powder and pepper in it, keep it aside
Preparation for Pani :
  • In a bowl, add tamarind chutney, mint chutney, lemon juice, cumin powder, asafoetida, black salt, jaggery/sugar, boondi, salt and water in it
  • You can add more lemon, black salt, cumin powder if required
  • If the consistency of the pani is thick, add more water
  • Add boondi in the pani
  • Refrigerate it
Preparation for Pani Puri :
  • Arrange the puris on the serving plate
  • Crack a small hole in the center of each puri
  • Add the potato mixture and yellow peas in the hole
  • Add tamarind chutney (optional)
  • Top it with handful of Sev
  • Serve immediately  

Note :
  • Serve pani puri immediately otherwise it will loose its crispness
