Beetroot Rice is a delicious and healthy one pot meal. It is quick, nutritious and flavorful. It is easy to cook and healthy. Beetroot Rice is rich aromatic rice which can be made in jiffy. It tastes great with a a bowl of raita, pickle and papad. The best part about it is that it is very easy to make and filling. It is packed with spices and flavor. It is a delicious rice packed with a sweetness of beetroot and flavor of spices.

Beetroot is very nutritious and full of health benefits. It is rich in fibre and vitamins. You can serve this healthy and delicious comfort meal for lunch with a bowl of raita. It is a perfect way to add beetroot to your diet. You can also pack this for kids tiffin.

Lets start with the recipe :

Ingredients :
  • 2 cup basmati rice
  • 1 medium size grated beetroot
  • 1/2 cup coriander leaves
  • 2 chopped onions
  • 1/2 cup chopped potato 
  • 1/2 cup chopped paneer
  • 4 chopped cloves of garlic
  • 1 teaspoon grated ginger
  • 2 chopped green chillies
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 teaspoon pepper
  • 4 cloves/laung
  • Salt according to taste
  • Oil
Preparation :
  • Soak rice in water for 30 minutes
  • In a pressure cooker, pour 1 tablespoon of oil and add cumin seeds, cloves, garlic, ginger and green chillies
  • Add onion and let it cook until it turn golden brown
  • Add garam masala, coriander powder, pepper and salt in it and cook
  • Add potato, paneer, grated beetroot in it
  • Add rice and 2 1/2 cup of water (as required)
  • Let it cook till two whistle and then turn off the flame
  • Let it cool down until pressure inside cooker comes down naturally
  • Serve hot with raita, pickle and papad
