How to make Vegetable Pulav

Recipe of Vegetable Pulav | Vegetable Rice

Vegetable Pulav is a delicious one pot meal. It is quick, nutritious and flavorful. It is easy to cook and healthy. Veg Pulav is rich aromatic rice which can be quickly made in jiffy. It is a comforting rice which goes well with any curry dish. It tastes great with a a bowl of raita, pickle and papad. The best part about it is that it is very easy to make and filling. It is packed with spices and flavor. It is best for lunch boxes and relished by kids too.

Veg Pulav is a rich, aromatic and flavorful rice which is a perfect comfort food. It is prepared by cooking rice with veggies and spices. You can customize it according to taste.

Lets start with the recipe :

Ingredients :
  • 2 cup basmati rice
  • 1/2 cup coriander leaves
  • 1/2 cup peas
  • 2 chopped carrot
  • 2 chopped onions
  • 1/2 cup florets of cauliflower
  • 1/2 cup chopped potato 
  • 8 chopped cloves of garlic
  • 1 teaspoon grated ginger
  • 2 chopped green chillies
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 teaspoon pepper
  • 4 cloves/laung
  • 2 cardamom/hari elaichi 
  • 4 whole black pepper
  • 1 Indian bay leaf/tejpatta
  • Salt according to taste
  • Oil
Preparation :
  1. Soak rice in water for 30 minutes
  2. In a pressure cooker, pour 1 tablespoon of oil and add cumin seeds, cloves, cardamom, whole black pepper, Indian bay leaf, garlic, ginger and green chillies
  3. Add onion and let it cook until it turn golden brown
  4. Add garam masala, coriander powder, pepper and salt in it and cook
  5. Add all the vegetable in it (cauliflower, potato, carrot, peas, coriander leaves)
  6. Add rice and 2 1/2 cup of water (as required)
  7. Let it cook till two whistle and then turn off the flame
  8. Let it cool down until pressure inside cooker comes down naturally
  9. Serve hot with raita, pickle and papad
Note : 
  1. You can add any vegetable that you like
  2. Instead of using pressure cooker, you can make it in an open pan
